One of the simple things in life I’ve always enjoyed is baking. I love to bake for my husband, and I used to bake constantly for the people I worked with. Last weekend the temperatures here finally dropped down far enough that I felt like baking! The last time I baked, I made some simple chocolate chip cookies. This time, I wanted to experiment with something a little more exciting and more appropriate as we transition into late summer. The result was these spiced apple oatmeal cookies topped with a delicious buttercream frosting! These cookies are chewy, fragrant, and perfectly infused with nutmeg, cinnamon, cloves, and allspice.

I really love this recipe because it is a strong, fall cookie. I decided to go ahead and use a full tablespoon of cinnamon in the batter. The cinnamon, allspice, cloves, and nutmeg create a super fragrant cookie with a great flavor profile. They also give it a rich dark color that contrasts perfectly with the buttercream frosting. For the apples, I went with a Granny Smith apple, but I think the cookies would just great with any variety, really.
Spiced Apple Oatmeal Cookies With Buttercream Frosting
These cookies are REALLY chewy, and I’d recommend handling them with care when they come out of the oven. As a general rule transfer them to a cooling rack and let them cool before moving them around, or they may break.
Semi-related, I finally upgraded my camera to a Canon EOS Rebel T7i and WOW, what a difference! I’m still struggling with low light in our house, but I can at least get high-resolution photos of my food. 🙂 Allison at Some The Wiser has a nice, easy-to-follow tutorial that I used to try and church up my photos a little bit. Her tips were VERY helpful, although I really need to get into my manual settings on the camera and play around to get the photos I want!
This recipe makes me look forward to fall, because it is SUCH a fall cookie. It’s the perfect transition into pumpkin spice season! Consequently, the buttercream frosting would be amazing on a pumpkin spice cookie as well. 😉 The diced apples in the cookie provide a nice, subtle apple flavor that perfectly compliments all the spices. Although this cookie could stand alone, it becomes next level amazing when you top it with the buttercream frosting!
The buttercream frosting is a perfect compliment to the spices in the cookie. It’s rich, creamy, and super easy to make. I’m a fan of buttery buttercream, so I typically start with less powdered sugar than a recipe asks for and add more in if necessary. If your buttercream seems a little too thick, add a tablespoon of milk (or almond milk) until you get the consistency you want. This cookie would also be amazing if you wanted to add in walnuts, or even if you wanted to just top it with toasted walnuts.
